Egyptian White Bean Seeds

Egyptian white beans (Phaseolus lunatus) from the Nile Delta are supplied whole and dried. Buyers judge dried beans on size uniformity, colour, the proportion of split, shrivelled and discoloured seed, and on cooking behaviour — the last of which is what a canner or a food manufacturer ultimately cares about.

Size grade should be stated as a screen specification rather than by trade nickname, since terminology varies between markets. Where the material is destined for canning, buyers usually specify cooking and hydration behaviour as well as the physical parameters, and those are agreed per contract.
