Egyptian Pumpkin Seeds

Egyptian pumpkin seed (Cucurbita pepo) from the Nile Delta is supplied as kernels and in GWS grade. GWS — grown without shell, the hull-less variety whose kernel emerges without a hard coat — is the grade most international buyers specify, since it requires no hulling and gives the uniform dark-green kernel used in bakery and snack applications.

Kernels are specified on size grade, colour uniformity and the proportion of broken material. Colour is often as important as size, because the green kernel is usually visible in the finished product, and a dull or uneven colour reads as poorly handled material.

Applications include bakery and cereal manufacture, snack production, confectionery, food-supplement manufacture, and oil pressing. Buyers formulating for the supplement market usually carry documentation and testing requirements above the food trade, and those are agreed before contracting.

The Nile Delta's alluvial soils and reliable dry harvest window suit the crop, and the material passes a cleaning sequence with sieving, gravity separation, aspiration and magnetic separation, with optical sorting where a colour or foreign-matter specification requires it.
