Egyptian Sesame Seeds (Hulled)

Egyptian hulled sesame (Sesamum indicum) from Sohag is supplied ready to use. Hulling removes the seed coat, producing the uniform ivory-white seed specified for bakery, confectionery and tahini manufacture, and the properties buyers judge it on are colour uniformity, the absence of unhulled and broken seed, and freedom from foreign matter.

Because hulled sesame has had its protective coat removed, it is more susceptible to oxidation and to picking up moisture than natural seed. Packing and storage are therefore part of the working specification: a moisture barrier is normally warranted, and material should be held cool, dry and sealed after delivery.

Applications include bakery topping and inclusion, confectionery, tahini and halva manufacture, snack production, and food service. Buyers should state whether the material is intended for direct consumption without a further heat step, since that governs the microbiological specification and, in some markets, the treatment requirement.

Sohag's irrigated growing season and dry harvest window suit the crop, and the material passes a cleaning and hulling sequence with gravity separation, aspiration and, where specified, optical sorting to remove discoloured and unhulled seed.
