Egyptian watermelon seeds (Citrullus lanatus (Thunb.) Matsum. & Nakai) are a traditional snack staple across the Middle East and Africa, and Egypt is one of the world's leading exporters. Upper Egypt's hot climate produces watermelons with large, plump seeds that have high protein content (28–35%), significant iron and magnesium levels, and the crunchy texture that makes them a popular roasted snack.
