Egyptian Parsley

Egyptian parsley (Petroselinum crispum) from the Nile Delta is supplied as flakes, powder and whole. Dehydrated parsley is bought principally on colour and on flake integrity: a bright green flake that has not shattered into dust is the signature of controlled drying and careful handling, and it is what a food manufacturer needs for visible-herb applications.

Flakes are the most commonly specified form and are screened to an agreed size. Powder is supplied where the buyer's process requires it. Whole leaf is available where the buyer prefers to cut close to use.

Applications include soup, sauce and convenience-food manufacture, seasoning and spice blends, snack and bakery applications, and food service. Because the visual contribution is often the point, colour is usually a contractual parameter alongside the physical specification, and buyers should agree how it will be assessed.

The Nile Delta's fertile alluvial soils and the reliable dry harvest window allow the crop to be dried quickly, which protects the colour. Material is cleaned to remove stalk and field debris, and each shipment carries a lot-specific certificate of analysis.
