Egyptian Dill Weed

Egyptian dill weed (Anethum graveolens) from Fayoum is supplied cut and sifted and whole. Dill weed is the dried leaf and stem, and it is a distinct product from dill seed — worth stating explicitly in an enquiry, since the two have different applications and different specifications.

Cut and sifted material is screened to an agreed size for blending, seasoning manufacture and applications where consistent particle size matters. Whole material is supplied where the buyer prefers to cut close to use or where leaf appearance is part of the finished product.

Applications include seasoning and spice blends, fish and dairy applications, pickling, soup and sauce manufacture, and food service. Colour and aroma are usually specified together, since dill weed contributes visually as well as by flavour in most of its uses.

Fayoum's dry harvest window allows the delicate leaf to be dried quickly, which preserves both the volatile oil and the green colour — the two properties that separate well-handled dill weed from material that has been dried too slowly.
