Egyptian cumin (Cuminum cyminum) from Upper Egypt is supplied as whole seeds and ground. Cumin is among the most traded spices in the world and among the easiest to buy badly: the seed looks broadly similar across origins and grades, while the properties that matter to a manufacturer — aroma strength, cleanliness and consistency — are not visible in a photograph.

Whole seed is the better technical choice wherever the buyer's process allows it. Grinding exposes surface area and volatiles begin to escape immediately, and a powder also removes the possibility of visual verification in a commodity with a documented history of adulteration.

Applications include spice blends and seasoning manufacture, meat and convenience-food production, bakery, and botanical extraction. Cuminaldehyde-driven aroma strength is the property most closely linked to performance in a finished product, and where it matters it should be a contractual volatile-oil parameter measured on the shipped lot rather than an origin claim.
