Egyptian Broad Beans (Fava)

Egyptian fava beans (Vicia faba) from the Nile Delta are supplied whole, peeled and split. Fava is a staple across Egypt and the wider region, and the three forms serve distinct markets: whole beans for traditional slow-cooked preparations, peeled and split for faster-cooking and processed applications.

Buyers judge fava on size uniformity, colour, the proportion of damaged and discoloured seed, and on cooking behaviour. Size grade should be stated as a screen specification, since trade terminology varies between markets and two suppliers describing the same nominal grade may be offering different material.

Applications include canning and ready-meal manufacture — ful medames in particular — food service and institutional catering, retail packing, flour and processed-food manufacture, and traditional preparations across the Middle East and North Africa. Demand is steady rather than seasonal, though it concentrates ahead of Ramadan.
