Egyptian Black-Eyed Peas

Egyptian black-eyed peas (Vigna unguiculata) from the Nile Delta — cowpeas — are supplied whole and dried. The crop is a staple across Africa, the Middle East, the southern United States and South Asia, and it is bought principally by canners, retail packers and the food-service trade.

Buyers judge black-eyed peas on size uniformity, the brightness of the cream-coloured seed and the definition of the black eye, the proportion of split, shrivelled and discoloured seed, and on cooking behaviour. Colour is commercially significant because the seed is usually visible in the finished dish.

Applications include canning and ready-meal manufacture, soup and stew production, food service and institutional catering, retail packing, and traditional preparations across several cuisines.
