Egyptian Chickpeas

Egyptian chickpeas (Cicer arietinum) are supplied whole and split, in both Desi and Kabuli types, from Upper Egypt. The distinction matters commercially and should be stated in every enquiry: Kabuli is the larger, paler, smoother-coated type specified for canning, hummus and whole-seed applications, while Desi is smaller and darker and is used principally for splitting and milling.

Kabuli is specified on calibre — the count per hundred grams, or the screen size — which is the single largest driver of value in that market. Desi is specified on size, colour and the proportion of damaged seed, and on milling yield where the material is destined for splitting.

Applications include hummus and canning manufacture, snack and roasting production, flour and besan milling, ready-meal and food-service use, retail packing, and traditional preparations across the Middle East and South Asia.

Upper Egypt's irrigated season and dry harvest window suit the crop, and material passes a cleaning sequence with de-stoning, sieving, gravity separation, aspiration and magnetic separation, with optical sorting where a colour specification requires it.
