Egyptian black-eyed peas (Vigna unguiculata (L.) Walp.), known locally as "loubia," are cultivated across Upper Egypt's warm growing zones. These heat-tolerant legumes thrive in Egypt's semi-arid climate, producing cream-colored beans with the distinctive black "eye" marking, high protein content, and fast cooking time that make them a versatile ingredient for food processors and retail markets worldwide.
