Hibiscus (Hibiscus sabdariffa) is bought for one property above all others: colour. The dried calyces deliver a deep red infusion, and the pigments responsible — anthocyanins — are what a beverage manufacturer, a tea blender or a natural-colour formulator is actually paying for. Everything else in the specification exists to protect that.
What is traded, and where it grows
The commercial product is the dried calyx, harvested after the flower drops. In Egypt, hibiscus is associated above all with Upper Egypt and the Aswan region, where high temperatures and intense solar radiation through the growing and drying season suit the crop.
Two commercial forms dominate:
- Whole calyces — preferred where visual appearance matters, as in premium loose teas and blends where the consumer sees the material.
- Cut and sifted — screened to a stated size, preferred for tea bags, industrial extraction and blending, where extraction rate and dosing consistency matter more than appearance.
Cut material extracts faster because of the increased surface area; whole material generally holds colour longer in storage for the same reason. Which you want depends on whether you are storing it or using it.
Colour, and why it degrades
Anthocyanins are unstable. They degrade with heat, light, oxygen and time, and they are strongly pH-sensitive — the same pigment appears vivid red in acid conditions and dull in neutral ones. For a buyer this has three consequences:
- A colour value has a shelf life. The figure on a certificate describes the material on the date of analysis.
- Drying conditions matter more than variety. Over-heated drying costs pigment that cannot be recovered.
- Your own storage is part of the specification. Cool, dark, dry, sealed. Material stored badly on arrival will fail your own release testing, and the cause will be at your end.

The rest of the specification
Beyond colour, the parameters that normally appear in a hibiscus contract are:
- Moisture — the control on mould development in a hygroscopic product.
- Foreign matter — stalk, leaf, seed and field debris. Hibiscus is hand-harvested and the seed capsule must be separated, so residual seed content is worth specifying.
- Cut size distribution, for cut and sifted material, stated as a screen specification.
- Microbiological parameters, particularly for infusion products.
- Pesticide residues against the destination framework.
Acidity is also relevant for beverage applications, since it drives both the sour profile and the pigment's appearance in the finished drink. If your product depends on it, put it in the specification rather than assuming it.
Who buys it, and why the requirements differ
- Tea and infusion blenders — appearance and colour in the cup; whole calyces command a premium.
- Beverage manufacturers — extraction yield, colour strength and acidity; cut material usually preferred.
- Natural colour and extract producers — anthocyanin content is the commercial basis of the contract.
- Food supplement manufacturers — documentation and traceability requirements are typically the most demanding.
The GCC market has its own well-established demand for hibiscus as karkadé, a traditional drink, where consistency of colour and flavour year to year is the buying criterion.
Packing and shipping
Hibiscus is light and bulky, especially as whole calyces, so a container reaches its volume limit long before its weight limit. Two practical consequences: freight cost per kilogram is high relative to dense seeds, and consolidating hibiscus with a denser product in the same container is often the more economical shipment.
Moisture protection in transit matters for a hygroscopic material crossing climate zones; specify the liner if your route or storage warrants it.
Buying checklist
- State whole or cut, and for cut, the screen specification.
- Agree how colour is measured, when, and with what tolerance.
- Specify moisture and foreign matter, including residual seed.
- Confirm the microbiological requirement for your application.
- Plan the container around volume, and consider consolidation.
- Store cool, dark and sealed on arrival.
