Egyptian caraway (Carum carvi L.) cultivated in the Fayoum Governorate is distinguished by its high carvone content, clean earthy aroma, and uniform seed size. The Fayoum basin's unique microclimate — warm days, cool nights, and mineral-rich artesian water — produces caraway seeds with volatile oil levels that meet the stringent requirements of European and American food processors and pharmaceutical companies.
